Zucchini Hummus Recipe
Zucchini is an excellent source of manganese, Vitamins C and A, magnesium, beta-carotene, fiber, potassium, folate, copper, riboflavin, and phosphorus.

Ingredients:
2 small zucchini, chopped
1/2 c raw tahini
3 cloves garlic
1 tbsp cumin
1/2 bunch of cilantro, chopped
1/4 tsp ground black pepper
pinch of cayenne (optional)
1/4 tsp Himalayan pink salt
1 lemon freshly squeezed
2 tbsp extra virgin olive oil
Place all ingredients in a food processor and process until smooth and creamy.
I like to eat this hummus with homemade sweet potato chips!
