Healthy and Gluten Free Orange and Blueberry Scone Recipe


These scones taste like such an indulgence, yet there are only 2 tbsp of coconut sugar in the whole recipe! Super healthy and really good. Can’t go wrong there! This recipe was really quick and easy as well!


Ingredients:

2 cups almond flour

¼ cup oat flour

¼ cup cassava flour

2 tbsp coconut sugar

1 tsp baking powder

½ tsp ground cinnamon

¼ tsp salt

2 tbsp melted coconut oil

2 organic eggs

1 ½ tsp vanilla extract

Grated zest of 3 oranges

½ cup fresh blueberries.


Preheat the oven to 375 degrees Fahrenheit and line a baking sheet with parchment paper.

In a medium bowl combine all 3 flours, sugar, baking powder, cinnamon, and salt.

In a small bowl combine the coconut oil, eggs, vanilla, and orange zest. Then add your wet ingredients to your dry ingredients and mix well, forming a dough. Gently fold in the blueberries. Then, lay the dough on a parchment paper and form into a circle. Cut the circle into 6 even size wedges. Transfer the wedges to the baking sheet and bake for 20 minutes. Let cool for a few minutes before serving.
