This dessert is delicious and actually good for you! Everyone needs easy no bake healthy desserts in their life. This recipe is oil free and sweetened with dates.
2 cups pitted medjool dates, chopped
Zest and juice from 1 lemon
1/2 cup water
2 cups pecan
2 cups raisins
1 cup hazelnuts currants
Blend the dates , lemon juice, zest, and water until creamy. Set aside
In a food processor, process the pecans into a flour and then drop the raisins through the chute to form a dough. Transfer the dough to an 11 inch removable bottom cake pan. Spread evenly and press firmly.
Add half of the lemon topping and spread evenly. Place that in the freezer, while you make the next layer.
In a food processor, process the hazelnuts into a flour and drop the currants through the chute until a dough forms. Roll the dough between two pieces of parchment paper, and lay it evenly on top of the tart. Cover this with the remaining lemon topping. Place in the fridge or freezer to set.
I like to freeze this and put pieces in the fridge 30 minutes before serving. Enjoy!
